In the early days, pizzas were not a specific product. The little flatbreads were inexpensive testers that bakers used to verify that oven temperature was correct. Rather than just toss them out, bakers sold them to those who were too impoverished to purchase better items. The poor began garnishing their pies with whatever sauces and seasonings they might have. Before long, street stands appeared and bakers began selling pies from their windows. Nevertheless, it was near the turn of the twentieth century before these humble pies became popular with more affluent customers. Legend holds that in 1889, an enterprising baker named Raffaele Esposito presented Queen Margherita with a special pie named in her honor. He made a pie in the colors of his country’s flag, using tomatoes for red, basil for green, and mozzarella for white. By all accounts, his creation was a hit with the queen.

Even after the pies became popular in Italy, American pizzerias were largely limited to Italian neighborhoods. That began to change after World War II. American soldiers who had been stationed in Italy developed a fondness for the pies. Less than a decade after the war ended, pizzerias were appearing in affluent, non-Italian neighborhoods.

Kodo originates with the Japanese aristocracy during the Muromachi era. It was an informal game played among men and women, giving opportunity to tell a story or just pass the time. To begin the ceremony the unlit incense is placed on a mica plate, which is then placed on top of hot coals. The heat subtly released the scent of the incense and those playing the game had to guess the ingredients through ‘listening’ to the incense in a very specific way. Through a series of ritualized movements the incense is lit and passed around. The tools used in the ceremony are as celebrated as the incense itself.
